Is probably not coffee.
Don’t get me wrong. I. Heart. Coffee. But the best part of waking up (besides the things that aren’t things like sunshine, my boy and of course snoozing the alarm no less than 4 times) is quite possibly an iced latte.
We live in Louisiana which is hot. Not hot like a dessert, but hot like a sauna. The air is at least 87% steam. You step outside and BAM you’ve had a shower- not the good kind. And where exactly am I going with this ramble??
My new favorite creation: The Coconut Iced Latte.
Its the perfect escape from the heat. Its cold, caffeinated and has a hint of coconut. Want to know another great thing? It will save you approximately $1,034. (Its a rough estimate folks, I don’t do math- that’s what CJ is for) Yep. Because you won’t have to attend Starbucks everyday after you learn how to make your own latte.
The ingredients you will need are:
- espresso (its different than coffee grounds, but you can get it where the coffee is at the grocery store)
- milk (I used almond milk)
- water and ice
- coconut extract (smells like an edible beach)
You will also need an espresso pot. Don’t worry these are cheap and easy to come by. I got mine at Ross for $5, which is about $995 cheaper than an espresso machine. Look, I’m saving money all over the place with this one.
Assembly:
These instructions are for a single serve espresso pot, if yours is larger you may need to adapt measurements
- Fill the bottom of your espresso pot with 3/4 cup of water
- Put 2 TBS espresso in your espresso pot
- Tightly screw the top and bottom of your pot together and place it on the stove burner
- Turn your stove burner to med-high heat and wait about 10 minutes for your espresso (magical goodness) to be ready.
- You should see steam coming from the top of the pot for a while as the espresso is made
- Turn off your burner and add your hot espresso to a heat proof cup filled with 1 1/2 cups of milk, stir together
- Now for the flavoring…sometimes I like to go really crazy and make a mocha, but today I’m keeping the extra sugar out (Um did you see all the fudge we had last week??). Extracts are a great way to add flavor without sugar and for this latte I used coconut. A little coconut extract goes a long way, I mean marathon long, so I didn’t even use a whole drop. I just stuck a tooth pick in the extract and then into my latte and ta da – you have a light coconut flavor.
